The problem with cheese cake is that it can get very monotonous. You need some other element to help balance it properly. I've also wondered if a second graham cracker layer in the center would help with that.

My grandmother puts bits of pecans in her graham cracker crust and it makes a lot of difference. The crust is my favorite bit and I've always liked mine with thicker crusts that go up the side. She always does a sour cream topping but I prefer ganache. My problem with it has always been that compared to other desserts it costs so more to make in it's most basic form. It's not something I can bake without have to go to the store.
