I usually filet and fry mine, but I'm open to other ideas. The few times I've smoked or baked them whole, the y-bones were unappetizing to pick through.

Dishwasher Salmon just with trout

I didn't eat a northern until recently because I remember someone telling me once they were gross.

The nice part about pickling northern is the bones just dissolve. People don't like northern mostly because it's so boney, but it tastes pretty good to me. My uncle's ex actually made a mean bullhead. It was covered in this spicy mustard sauce that was incredible
