The red and green bell peppers aren’t “hot” peppers. The only pepper spices in the etouffee are the cayenne and whatever hot pepper powder is in the Cajun seasoning. The Trappys and Franks are optional toppings after it’s cooked ( Frank’s just because I’m out of Chrystal).
