Why do I always fail at baking/making noodle and pasta? when baking my bread never really expand that much even though I follow the instruction on the recipe 100% and most of the time it still smell kinda flour-ly. Also my dough never become as smooth as the recipe. Is it the kneading?

try using less water than the recipe says
makes it easier to sneed
if it still doesn't rise give it more time or put it in a warmer place

you're probably just shit at cooking. Baking is for children and women but inflates your self confidence, pasta has just brought you down a notch. Also
>use bread flour for pasta
>use 2 yolks for every whole egg
>don't add any other fat
>knead it properly then let it rest properly
90% of pasta recipes are trash, the one on serious eats is pretty decent.
