Chicken hearts have a pretty light flavor and are similar tasting to regular chicken thighs imo. If you want to try liver which is perhaps the most nutritive food on the planet start off with something like a paté that is mixed with other meat so the flavor isn't as strong. If you like that you could just try some chopped liver and onions. I don't have any experience cooking kidneys other offal but I've heard good things. Best post in the thread. As an American, it fucking pisses me off that a lot of Americans are such pussies that they won't stray away from beef, pork, chicken and the occasional turkey. Lamb, duck, quail, sheep/mutton, goat - all awesome tasting meats that aren't consumed that much in the USA. And when Americans do eat meat they almost never eat the organ meat (although we used to). From the studies I have seen those who eat moderate carb, moderate protein, and moderate fat have the lowest mortality rate.

I was pre-diabetic and my doctor said I should cut out sugar. I increased it. I cutting out a majority of fat and that brought down the blood sugar and I also lost weight.
