Ok, so my family is backwards mud people and I want to cook something nice for them. Problem is my dad can’t have mushrooms or spinach, my mom can’t have dairy or gluten (it’s in her head but I can’t fix it). To top that off my little sister is now vegan to be trendy. For the love of god give me any dish you have. I’m at a loss.

tacos (corn tortillas = no gluten). get some fried potatoes in there, some beans, some guacamole, some salsa, some vegetables, meat substitutes if you like.

this recipe uses a dairy-free milk/cream substitute but sometimes those have a weird flavor so up to you. a potato soup can be thick enough just by the starchiness of the potatoes especially if you're pureeing it

it looks like a lot of work but it's about as hard as a pancake and your mom can have fresh bread without gluten. it's a nice treat.

Mexican rice
>Dice and saute onion until it starts to brown
>Add 2 cups of pre rinsed Basmati
>Toss to coat rice in oil (may need to add more oil)
>Toast until rice starts to turn golden
>Add chopped garlic and jalapenos
>Fry until garlic is fragrant
>Season with salt, pepper, smoked paprika, ground cumin, ground coriander
>Pour over a can of tomatoes that's been blended smooth
>Pour over vegetable stock (you want 4 cups of liquid, measure the tomatoes then make up the rest with vegetable stock)
>Stir through then simmer with lid on until liquid evaporates
>Remove from the heat and sit for 5 - 10 minutes
>Stir through lime juice, chopped coriander, corn kernels, black beans, and diced capsicum
Serve that however. In a burrito with hot sauce, avocado, lettuce, with fried eggs on top, eat it as is, have it as a side, whatever.

If it's not a legitimate health issue then just lie. "Oh don't worry mom this is almond milk/vegan cheese and I brought gluten-free [item]." Bring your shit in an unlabeled tupperware, and if it comes down to it then grab a cheap thing of almond milk, empty its contents and fill it with real milk.

Also zoomer vegans need to be punished rather than catered to. Make a god-tier meal for the normal people and bring her a fucking Wal-mart salad. I woiuld not cater to the vegan idiot child. They need to get used to their restrictions by learning how to do their diet on their own. Maybe it will become boring enough to quit that nonsense for them.
Just make something enjoyable for your parents. And, the child can skip the main meat.
I like to do a Mediterranean/Greek sort of themed dinner sometimes when I do a grill night. I'll do some greak or zaatar seasoned chicken. Breasts, kebobs or spatchcock, nice lemony yogurt marinade, lots of herbs. To the grill, I'll marinate in some balsamic and olive oil, thick slabs of grilled aggplant, grilled zucchini planks, red bell pepper, red onion, and thing in season, a mixed grilled veggie platter. For the starch, you can do roast baby potatoes, a rice pilaf, couscous, or nice salad. Buy some naan or thick pitas and finish them on the grill buttery and browned, or do it from scratch. Grate some cucumber into some tzatziki, or make some yogurt dressed diced cucumbers with dill.
Very similar dinner for me, also on the grill, is skirt steak, argentinean or other sausages, all those planks of veggies, portobellos, and a heated pourover of some chimmichurri. Garlic bread, whatever starch, could be rice.
As long as you have at least 2 veggies and the starch and bread, you don't have to do mom's dairy or disappoint the vegan.
