I'm fond of chanterelles myself. We also have this https://en.wikipedia.org/wiki/Heimioporus_betula where I live, and it tastes like lemon when cooked. Sprinkle some powdered sugar on top after sauteing in butter and it tastes disturbingly close to a lemon square.

Today I oven roasted some champinjons. Went great and I'm happy with the result. Usually the fuckers take up all the space in the pan and take eternties to fry. Now they roasted in the oven whilst I panfried the meat.

Just a simple roast of ~200c together with some oil, salt and pepper. + a dash of soysauce on them.
