Pickled onions are good, black beans are also good (no canned shit, make em yourself.)
With bacon, are you working with thick cut or thin strips? Thin strips are stupid and should only be used in breakfast style burritos, thicker cuts can be cooked like carnitas (i.e fill a small saucepan with water and spices and a bit of lard, throw cubes of cut bacon in, cook until the water evaporates, and let the bacon fry in it's own fat and the lard)
With the onions, you can do pickled onions (white onions aren't as good as red onions), with white onions you can caramelize them and throw them in some beans to use in a burrito.

My jar of pickled onions literally fell and broke; I was very upset. I've got pickled beets, but I don't think that's gonna go well together. Will add some raw red onions.
