Sometimes there are just too many of them and they need to be culled or their population will explode. Then they overgraze all the vegetation, which sets off a chain reaction that hurts all the other wildlife. This is why states issue hunting licenses. We killed off the wolves who did this naturally, and planted too many crops that they eat off of (because there are too many of us overall, and too many people clustered in cities).

Deer can be good, its very lean but flavorful.

It's fine. The only culinary drawback is the lack of fresh meat. Despite there being lots of meat produced, all meat on market or in shops is frozen. I've heard there is some steak shop that sells cooled fresh meat but I haven't checked it
