A "vegan" restaurant. I would go out of my way to make it look explicitly vegan, and call everything on the menu what vegans call it (Vegan Burger, Vegan Lasagna, Vegan Pizza, etc) but the twist is that it's all actually made with animal products. Vegan isn’t a recognized FDA term so I’d be good legally.

Building on this idea, I really wish restaurants had the option to order a dollar worth of whatever food item. Mostly talking about food truck & fair food / concession food. Like if I'm at the fair and want a corn dog the only option is an $8 footlong dog that's probably 1000cal. Or if I want cheese curds I can only buy a stacked pile of greasy cheese. Ideally I could go to the vendor, give them $1, and receive $1 worth of food. This only applies to high throughout operations, I'm not expecting to go to a steakhouse and get $1 worth of ribeye.

Do a high end version called sushi-q make little bite sized bbq foods, like a tiny roll with some pulled pork on it and a pickle on top with a small variety of bbq sauces, invluding the mustard based ones and hot sauces or horse radish sauces. Could do little bratwurst rolls or bacon wrapped around coleslaw with a brisket center. Maybe rib meathush puppy dough ball with mac n cheese and bbq beans. I dunno just throwing out ideas.

Like, the building and interior looks like a mediaeval castle, all the employees dress in mediaeval clothing and speak in ‘þe olde englishe’, the floor is covered in sawdust for easy cleaning, and the furniture are all heavy untreated wooden stools and lumber tables.

I want to start a chain similar to taco bell that panders to people that are either high and hungry, or up too late and hungry, or both, but unlike taco bell, we'll only focus on "american" food. Pigs in a blanket, sliders, crispy french fries, popcorn chicken. Small things that you can eat a lot of. For desserts, we'd have a similar theme of small finger foods, like bites of deep-fried dough (like funnel cake, but vaguely fry-shaped) donut bites (baked that morning, don't come in the afternoon if you want fresh shit) and licensed icecreams based off of popular candy bars.

Or I'll just buy out Krystals.
