What is the point of bay leaves? Every recipe calls for their inclusion and then tells you to take them out after an hour. They taste like nothing and they add no flavor to things they're put in.

I've scientifically proven that to be untrue. I once forgot to remove the bay leaf from my ragu for my lasagne, after it cooked for a while in the oven (inbetween to pasta layers) its taste was clearly noticeable, even overpowering in that area. So I conclude that in normal circumstances bay leaves will always alter the flavor of your dish, even if only in small amounts.
