I'll eat a ton of almost any vegetable simply roasted or steamed as long as there's a bit of lemon or vinegar on it, they really need just a bit of acidity and then they taste great. It's not hard to make a piece of meat taste good as long as you don't severely overcook it but you kind of have to know what you're doing with vegetables and then they really will taste great. I've gotten multiple people who thought they didn't like vegetables to start saying they do after trying some of my dishes.

A lot of it is just technique. I had someone who said they didn't like eggplant parm enjoy mine because I peeled the eggplant and thinly cut it crosswise, while most places cut it lengthwise to save time but it makes the eggplant seem more fibrous. Another person didn't like raw onion until I gave it to them very finely minced which makes it milder than an equal amount cut into bigger pieces.

I get asked to make a few other vegetable dishes pretty often. One is glazed carrots where the person would just dump a ton of brown sugar on the carrots, but instead I steam them and then reduce the leftover liquid with a little butter until it's syrupy and then coat the carrots with it. Really flavorful and naturally sweet. I make a vegetable stew with any kind of mixed vegetables simmered until mostly soft but it's in a sauce made with caramelized onion and stock thickened with dark roux which gives it a lot of flavor.

Not sure if you'd consider beans a vegetable, but I make a basic curry-type dish where I'll simmer the beans with lots of chopped onion, four medium/large onions for a full pound of dry beans. After simmering for long enough the onion basically dissolves and gets sweet. When the liquid for that is mostly reduced and it's getting thicker, I'll melt a couple sticks of butter in a pot and when it's heated I'll add a little bit of cumin/coriander/black pepper. Might seem like a lot of butter but the beans are starchy and not really high in calories so I think it needs it, and it gets served with plain bread or rice. Then I'll add the butter mixture to the beans and let it thicken a little more if it needs to. Season to taste with soy sauce and vinegar, which might sound weird but the soy sauce makes it nice and savory and the vinegar balances out the fat and makes it feel kind of refreshing to eat in a way. Had another person who said they hate curry enjoy eating that.

Also one of my favorite salad dressings is just measuring out the amount of oil I want to use and then adding enough mustard until it'll emulsify. Can't use a super hot mustard for this though. Sometimes I'll add a small amount of grated garlic, black pepper, and/or fish sauce. I like to use it on a big salad with a ton of vegetables and mixed nuts/grated cheese, and I'll just eat a huge serving of that for dinner sometimes with a piece of bread or crackers or something.

Roasting is nice but even steaming it for long enough will make things like broccoli and cabbage sweeter. The problem with boiling is that a lot of the sweetness and flavor gets leached from the vegetables into the water and then the water gets thrown out, so you end up with bland mush.
