Part of me wants to get a bread maker, but the other part of me knows I'd barely use it and bread isn't good for me.

I've been making great sourdough bread for a long time but my starter started smelling terrible and since then I haven't been able to make a new one.
I've basically given up so I'll try making Fagusea "pizza bread" recipe, which is basically a pizza dough made with yeast left to ferment in the fridge for over a week.

I used this recipe and it kicked right off. Just make sure all grains and juices are organic and the water is unchlorinated. I'm going on 5 years of the same starter now. I use it for baking 1-2 times/week, feed it, leave it out for 24 hours and store in the refrigerator.

Few things make me happier than a slice of sourdough with a nice coarse mustard.

Does butter matter for the hydration ratio? Butter makes the dough wetter
