I'm Spaniard and I can't fucking cook a simple Spanish tortilla. I really can't. It's just fucking potatoes, eggs, and (optionally) onions.

Nigga.
Cut potatoes in round slices.
Dice onions.
Drop whatever amount of onions and potatoes you like in a lot of oil, preferably olive oil.
Salt to taste, as well as any other spices you want to add, there's no recipe.
Crack the eggs and mix them well.
When the potatoes and onions are ready drop the eggs.
Wait a bit until the eggs take their shape and then flip the tortilla.
It's done.

I know. But it always sticks up on the pan and remains burned on the top and raw and runny on the bottom or something. I tried both pan and oven.

Temperature control, my Spaniard brother, temperature control. You don’t want the pan too hot that it burns on top and undercooks the rest. Aim for a medium temperature. That should brown and cook it through.

Yes, this is the most common mistake, I believe. Most things can be cooked on medium.

What I do is use two frying pans to flip the tortilla so both sides get evenly cooked, and always cook it on medium heat for a while. I add nutmeg to mine as well
