My experience with corned beef was always mixed into mashed potato as a "hash" and it was grainy, not a particularly pleasing texture.

That is canned corned beef. Why does that exist? Cheap way of preserving cheap cuts beef for consumption by poor people. With modern refrigeration, canned corned beef only exists cuz some people were used to it and liked it.

Good corned beef will come from a quality deli. Some places sell Boar’s Head Corned Beef Round, which when steamed makes a decent Reuben. But you want a local deli or sandwich shop with a good reputation for buying corned beef.

Yeah, I don't know that much about Jews. My understanding stems solely from the Jewish friends I had growing up and they followed the Jewish faith about as closely as American Christians follow Christianity (pretty much Christian in name only).
