My spin on pork chops and apple sauce, pork chop seared and then butter basted, sauteed apples and a bourbon pan sauce. Sauce is thinner than I usually make it, but I was really hungry and also drunk when I made this, poured too much bourbon in the pan and didn't have the patience to let it reduce as much as I usually do, pretty much just evaporated the alcohol and called it good. Side of mashed potatoes.

Leek ash. Had a vichyssoise as well as creamed leeks on the menu, but nothing to do with all the leek scraps.

So you collect all the ugly leek tops and bits and throw em on a sheetpan with parchment and roast them slowly til dark and brittle, throw them in a blender, and pulse the hell out of it.

Then you put them in a sugar shaker and dress plates with them - the flavor is like a smokey in-between with cocoa powder and onion powder, a cool cheap way to add mild bitterness.

You can use them to blacken things like pasta or tuiles - but you've gotta be careful to sift it very well, as it'll have unpleasant crunchies in it otherwise

It’s hard to describe. You need some oil, which puts them into chalupa like territory. They have a greasy chew to them. But you don’t deep fry them, so they retain some toasted flour tortilla texture, except they’re very herbed and not plain so this is quite pleasant. Ideally you heat them on med-low, taking your time, then once moisture is gone (the green onion pancake killer) you kind of try to burn the outside to get that crunchy texture.

You end up with a crunchy half chalupa half herbed flour tortilla texture and most importantly it stands up to and pairs with cheese very well, and really, breakfast in general.

If you can find some, just buy them and fuck around with them until you figure it out. It took me probably ten until it was even edible, but I knew from a trip to Taiwan how good they can be so I didn’t give up.

I have a form of muscle myopathy (muscle loss). But it mutated and I have a weird version that I don't want to name because last I checked only 6 people in the world had it and I don't want to dox myself. Normally my desease means your muscles degenerate and somewhere around 12-16 you die from either your lungs or your heart being too weak to keep going. I got lucky twice in that my internal organs are not affected AND it doesn't seem to progress with my external muscles. Noone knows why and I'm not even sure if it might not progress at some point again, but I choose not to think about too much. It hasn't progressed in the last 24 years and I just hope that won't change.
The result is that I have less mucle mass than normal people, I can build less muscle mass than normal people (and slower) and I am generally speaking weaker. I was healthy enough to go to a normal school, but couldn't participate in PE. I'm not 100% sure but I assume my maintenance is around 1500. I'm 6'00 for reference.

I used to go to the gym before covid, but during it I have gotten lazy. Started doing home exercise again like 2 weeks ago. I procrastinated going to the gym for a long time before that because I was self concious about it, since you can't see my disability that easily if you don't know what to look for, so I just look like a really lazy gymgoer, but people were generally nice. When the gyms open up here again I'll go back. Until then, I pay attention to diet primarily to loose weight.
Turns out when you can barely get up the stairs at normal weight (and by using the railing) being overweight doesn't help. Who would have thought.
