same texture. the brownie does not turn out cakey, and it gets some milky flavor and less eggy flavor because a lot of brownie recipes i’ve seen call for a really high egg ratio to the point of them being basically chocolate eggs more than brownies. egg whites contain all of the aroma and flavor that we associate with eggs, including the sulfuric compounds that can smell like farts if too many eggs are present; that’s why those spongy jiggly cakes that call for the batter being like 50% eggs by weight tend to smell not totally appetizing and not taste like much other than eggs.

I like to keep some yolks in there though because yolks are good and provide richness and emulsification.

More whipping in eggs means more light and airy
