It depends on the grade of cocoa used. As with filter coffee if you are only consuming the raw ingredient then you are getting it's pure taste.

Unfortunately most chocolate sold at reasonable prices is forastero cocoa, which is the cheapest and easiest to grow. The percentage doesn't guarantee quality, only whether there are additions.

So, we're not going to be getting criollo at those prices much like you wouldn't get arrabica for the price of robusta coffee. You'll get a very strong sensation at best but it will tend to lack any nuance of flavour. Having said that some brands are better than others. I prefer Lindt to Green & Black, which has a very flat almost cardboardy flavour to it. Each person's taste is different.

I have had the pleasure of having good chocolate on special occasions ranging all the way up to 100%. I forget the brand (something I couldn't pronounce). The important thing is that it was strong yes, but also had a lot of other flavours too. I got this smoky wood then almost mushroomy and finally hint of cinnamon flavour. Amazing stuff and not bitter in the same way we wouldn't expect coffee to be bitter. Sadly I can't afford to buy it myself.
