I mean mayo is just eggs and oil, which is pretty close to the original recipe. Pretty sure just using mayonnaise is a hack to skip a few unnecessary steps in the traditional recipe. It's anyway emulsified as it is

Onions, garlic, cream, and yes, also peas if you like, belng in a great Carbonara. It's an American recipe (look it up shitaly), so it has great variety.
