I grew up in the country and now live in the city. Generally speaking, people in both of those areas seem to have good taste. So why are the suburbs such a culinary wasteland? 99% of the restaurants are shitty chains and the residents who frequent them wouldn’t know quality food from dog shit.

Urban areas have the same chains as the suburbs, you just don’t notice because there’s also so many local/independent restaurants, both new and long-established. These places can also charge significantly more than chains, as they’re nicer and the local customers have the income to buy it.
Rural areas tend to have more mom/pop places (if anything) because actual country areas simply don’t have the population density for it to be worth someone investing in a franchise.
The suburbs have the perfect mix of population density and mid-level income for chains to thrive.

I’ve lived in rural Appalachia and two big East Coast cities. Having experienced both lifestyles, I can say that this is 100% false. Growing up in the woods was cool in some ways, but it would’ve been cooler to have had more than two restaurants, some museums, a paved road and kids my age that lived within walking distance of my house. No, they really don't. I split my time growing up between the city with my parents and the country with my grandparents. The restaurants in "the country" were truly some of the worst possible. I have fond memories of them because it was time spent with my grandparents, but that doesn't change the fact that the restaurants were objectively horrible.

There are still a couple of those places around, and the only reason they survive is all the elderly people who have always gone to them.

Anyway, as far as suburban restaurants, quality varies but they can be excellent.

Thanks to ubiquitous zoning, traffic, and minimum lot/building size laws in nearly every state, it's just flat-out illegal in most of the country for any new housing to be anything besides single-family vinyl villages such as >>16215620
These neighborhoods are, unfailingly, unsafe (because of relatively high speed and abundant traffic, no traffic calming whatsoever), unwalkable (no pedestrian paths or right of ways), underserved (businesses/restaurants are not legally allowed to build inside or on the edges of them), insolvent (legally required to be on city/municipal water/sewage, which their distance/density makes more expensive for the local government to maintain than the taxes in the home will produce in its lifetime), shitty places to live that lose easily 70% of their value after they start to fall to pieces 25-30 years after they're built, financially devastating their owners and local government.
It is, legitimately, almost impossible to overstate how many disastrous system-wide issues in the U.S. stem from modern-day suburban planning.

Basically the only way to have a half-decent quality of life in Suburban America is to luck out and buy some elderly couple's post-WWII pre-single-family-zoning home that they've mistakenly listed for 50k.

Not all rural/smaller towns are the same. I live in an area with maybe 25k people and there’s a wide selection of places to eat and drink—mostly local places but with a sprinkle of some corporate shit.

There’s a lot in between a micro-town of 1k people and sprawling city. I get the benefits of a walkable environment, plenty of dining options, virtually no crime with a sense of community.

I like living in the suburbs. I get the choice to either fuck off in the mountains or in the city whenever I want since I'm in between. Rent is okay and I don't mind commuting to eat something worthwhile.
