I used to make my own spice blends, but it got too pricey for something that loses potency before I use it all up. Creole seasoning alone can have 10 or 12 ingredients. Some spice mixes definitely have their place in the kitchen... such as garam masala. How much of a hipster do you have to be to grind your spices from scratch every time?.

Also, what's wrong with measuring ingredients?. I have learned not to trust a recipe's spice amounts to the letter... but it's a decent indication that the required amount is around a certain volume.
