Surprisingly we don't have issues with Chinese as foreigners like to believe we do. We have a growing population of Chinese-Koreans along with Japanese-Koreans. Look up one of Koreas most favorite foods that are Chinese inspired: jjajangmyeon & Jjamppong

If you happen to live near a korean population, find a restaurant that serves it. I'm sure once enough hipsters try it, it'll be another meme korean food people talk about.

It's mostly eaten as a side dish in Korea, but I like to just eat it on it's own because it's a nice low effort salty savory snack. Just slap a pile onto a plate/bowl and eat it.
A simple bowl of rice goes well with it if the flavor is too strong on its own.
For me, it's usually not worth the effort to go full kimchi fried rice.
It was a way different flavor depending on if you cook it or not, so you may like one over the other.

When you see kimchi in a ‘regular’ grocery store, it’s expensive because it’s typically some artisanal (or wannabe) organic kosher vegan carbon-neutral sustainable superfood-memeshit, because the only sort of people who would but it at a regular grocery store are people who see it as that.
Most grocery store shit actually is labeled vegan, which means no anchovy.

Do you have any Asian stores near you? That’s where you wanna go. Massive containers of various kimchi, in all of its fish-containing glory, for inexpensive.

Same day kimchi is epic, but starting at day two until its ripe, its bland and unappetizing. Such is the way of the kimchi. Aging time is a key ingredient as well as the temp used to ferment it (long and very cold, not frozen). South Korea has an average high intake of salt in general with some of them consuming like 20g of salt per day which is insane. It's thought too much salt damages the stomach lining and leads to infections which turn into cancer. But they also smoke and drink a lot of hard alcohol too. There isn't anything specific about kimchi in particular that makes it cause cancer though.
