holy shit. just made zoodles for the first time. im on keto and cut out carbs. they are fucking awesome. basically no reason to eat pasta anymore with this substitite. worked amazing with shrimps, butter/garlic, salt & pepper and some lemon juice. i used to eat this with pasta but no more. give it a try.

bought them fresh and just cut them manually cause i just wanted to try it. thinking about buying a spiralizer now.
i used a normal peeler. mine were thinner than in the picture but more fettuccini like than spaghetti like but not bad and worked well with the shrimps, sauce/garlic, lemon etc.
i put some salt on them and let the water drip out then dried them with a paper towel before putting them into the pan with the shrimps and mixing them in.

no i havent tried it cause i dont have a mixer to make it but i guess i can just cut it or whatever. gonna try that next for sure on my keto journey. i obviously eat cauliflower before i can only assume that its good.

i don't think so. probably would be too dry cause of those extended high temperatures. i think it would taste great as a substite though especially with the sauce and everything you wont notice much difference compared to pasta cause it gives you some of the texture and feeling of eating pasta. if theres some meat and spices, cheese its probably barely noticeable that its not pasta. definitely something worth trying but the process has to be adjusted. i like making Ziti for example and im not sure how I'd do it with zoodles especially the baked cheese part.

I've been mixing 48-72 hour fasts with keto for about 2 years now and its worked great. It's just that i've really only been eating baked chicken thighs, bacon, and steak. It gets boring.

i dont think thats a keto/low carb problem tho. theres so much you can do. carbs are mostly sides anyway or compllimentary on a lot of things. just make the same food just minus the carbs.
so much seafood you can experiment with. vegetables, salads. nuts.
i do IF as well even before cutting out carbs. it really simplifies life too cause i don't have to worry much about what to eat or when. i have my set times and i know i don't have to overeat some trashy carbs and move on with my day.
i also don't have a lot of issues with eating the same things a lot like when i ate mostly carbs i ate a lot of pasta with pesto, or baked zitis and stuff like that cause it was easy and i had plenty of it at home.
i made it my goal to buy fresh food every day this summer and stick to it and see how it goes. not sure how id feel after 2 years.
only thing i truly miss is ice cream. i fucking love ice cream man and nothing can substitute it.

Do you know any good resources for keto alternatives that are natural? It seems like the keto community just tries to make a shittier version of the carb dish, e.g. almond flour "keto cake", rather than making new recipes. I suppose cauliflower rice and zoodles are somewhat like that as well, but at least it's just a clever way of cutting up the raw vegetable rather than processed food.

no like what? i mean theres nothing more pure than meat and low carb veggies or fish and veggies. there are also shirataki noodles. maybe you can find them. as an anime poster and weeb you probably enjoy jap food. looks very pasta like but i havent eaten it.

i think thats mostly marketing to get people to move over with the classic "hey you won't miss out on anything trust me" bullshit.
im not delusional. nothing beats pasta, or a burger or fries or lasagna or all that sugar but i can go without it and if its close enough in taste like my zoodles + shrimp dish i made today the trade off is even worth it. id eat that even if i wasnt on keto.

average zucchini has like 3 grs of carbs. the entire meal has probably less than 10 if you count all the tracecarbs of all ingredients. pretty much every food has some carbs even if its not much. its unavoidable. its easy to tell when you are in ketosis anyway and you can adjust if a single carb kicks you out which is unlikely.

i don't even do it cause i want to lose weight. i just got disgusted by myself for eating carbs and gravitating towards them automatically like a robot. when you stop eating them you notice that 90% of the food in grocery stores is nothing but empty carbs.
side effect is that i feel much better and i can explore food in some directions i haven't gone before like how i discovered zoodles today.

Yep, and you can see it in the fucking floor plan too. The milk and eggs are at the opposite corner of the store as the vegetables and meat, so you have to walk through all the horseshit just to buy ingredients for steak and eggs. And when you inevitably start suffering from diabetes, high blood pressure, high cholesterol and insulin resistance from the 40-50 year-long insulin spike, the (((doctor))) will just put you on pills to treat those symptoms instead of just telling you to stop eating dogshit.

Reading the recipe it sounds almost exactly like caulifower au gratin, can't believe I didn't think of that. Do you know if its possible to get the rice texture without a food processor? as long as the sauce is good, you really don't find yourself missing the regular noodles, the less carbs I eat means the meal is arguably better for me, and there are other uses for mine

Just use a box grater. The cauliflower naturally comes apart as rice-like granules.

It has a much closer flavor profile to noodles, doesn't need to be dehydrated, already comes as strands, and you can save a pot by just keeping it in the shell and stuffing it with your sauce.

zoodles don't look like noodles though, and they don't really taste like noodles (they actually have a taste unlike flour noodles). the only noodles you might be able to claim they're copying are those spinach noodles, which kind of kills your fake-argument, since they're pale attempts to get that nice vegetable flavor into otherwise tasteless noddles, whereas zoodles and spaghetti squash actually do it right.

spaghetti squash is sky-high in sugar which is why it has that "closer flavor profile to noodles". zucchini noodles have a somewhat different flavor than flour noodles, but its better imo - it actually has a *taste*, whereas noodles have no flavor of their own other than the bit of sweetness from the starch; they're really just sauce horses.
