Let's go back to the seafood example I was telling you guys about, it's a tostada, which is a crispy fried tortilla, it's a little bit salty but not much, also Ensenada is one of the best places in the world to buy seafood because you can get fish from either the pacific or the gulf of cortez, a lot of japanese places get their tuna and bonito from here, it's very fresh. Combine this freshness with lime, which cooks the seafood, a homemade salsa with peanuts and chile ancho, giving it that crunchy texture to combine with the soft texture of the seafood and ceviche, all of this is served on a tostada, garnish with avocado for a little bit of richness and pickled red onion for a little more brightness. I think it's something perfect. Very fresh, bright, beautiful and tasty.

Also just because I'm in the mood let me tell you a little bit more about the Baja California region which I'm from, just because I love it. It's also called the mexican mediterranean. We're at the same latitude as the mediterranean, so the weather is very similar, thus giving this land a lot of the qualities needed to grow great vines to make good wine, combine this with a thin strip of land between the pacific ocean and the gulf of cortez, so you also have a lot of seafood. Baja California also was a french colony at one point in our history so there is also a lot of french influence in this region, combined with our mexican heritage to make tasty food, you can get some incredible things here. Ensenada is considered one of the gastronomical capitals of the world.

Pescado al mojo de ajo, is a fish dish cooked in butter with lots of garlic, the oyster soup in ensenada also was part french influence with its roux base. Also the pueblo nuevo lobster is cooked in pig lard, butter and veggies. Tons of butter and lard is used here.
