Anyone else really love dried shiitake mushrooms? The taste, texture and smell is just amazing/
I really love them but I don't eat them as nearly as much as I ought to be, any suggestions for recipes to rectify my mistake?

Making the Huangmenji recipe from chinese cooking demystified tonight which turned out pretty great the last time I made it.
Is making risotto with it a good idea?
If I'm using chicken with it should I use the soaking liquid + chicken stock or just stick with chicken stock?

I use them to make stock for ramen

Risotto would likely be better with dried porcini than shiitake

With the stock you can just crumble them and throw them straight into the chicken stock instead of pre soaking
