Looks good, mate.

Just a tip - if you like your latkes lacier and more crisp vs the cakey interior style that you have - after grating potatoes, soak them in cold water ~ 1+ hr. Remove the shredded potatoes out of liquid carefully so you don't agitate the liquid. Then drain the liquid slowly - it should leave a film of potato starch at the bottom. Now in place of the egg, mix that remaining starch with the potato-onion(I add schmaltz or melted butter to this mix).

Pan fry as normal.

But to each their own, I know plenty who prefer the cakier style over the style I mentioned, but if this is your first time making them, I recommend at least trying the more "hash brown"-esque style at least once.

I don't know about green, but you can keep them from oxidizing by keeping them in water when you're slicing. Once you squeeze the moisture out they shouldn't oxidize as quickly.
