I like to puree them with that spicy Mexican tomato sauce and marinade chicken in it. Then you can shred the chicken and finish it in the rest of the marinade.

Makes a very tasty burrito/quesadilla.

Get some dried guajillo and ancho chilies, take the seeds out and boil some water and let them soak. Then grab a blender, put those in with two Serrano peppers, your can of chipotle chilies, a tablespoon of cumin, paprika, and a teaspoon of cinnamon, and a teaspoon of turmeric, with a small can of diced tomatoes. You now have an amazing enchilada sauce.

Unfortunately the skin of the chipotle pepper is largely indigestible, so as others said you have to finely chop or puree the peppers to leave them in anything you cook. An immersion blender works well in soups, even creamy ones. Any soup/stew is improved with the spicy/smokey flavor, but if you pour a can on a roast in the oven or crock pot a large chunk of tough meat is also improved. Dump the entire can in and if you don't chop the shit out of the peppers, treat them like bay leaves and remove them before serving.

since none of you faggots will give a real answer. i make this whenever i have a leftover roast chicken or some shit from publix

2 tablespoons of vegetable oil
1 medium white onion cut into slices
2 large garlic cloves finely diced
3 cups of tomato cut into cubes
2 chipotle peppers in adobo chopped
3 cups chicken cooked and shredded
parsley
Salt and pepper to taste.

Heat oil in a large frying pan over medium heat and add the sliced onion. Stir-fry for 3 minutes and stir in the garlic. Cook for another 2 minutes until fragrant.
Mix in the chopped tomato and parsley, lower the heat, stir and let cook until tomatoes start releasing its juices. This step will take about 6-7 minutes. If your tomatoes aren’t juicy enough add a couple of tablespoons of water.
Finally, add the chicken and chopped chipotle pepper. Simmer for about 8 more minutes until all the flavors had blended. Season with salt and pepper.

I like taking a small pork roast (boston butt works good) and rubbing a can of pureed chipotles all over it. Cut some slits and add some lightly crushed garlic cloves and put the roast in a crock pot or pressure cooker...shred the meat and make tacos.
