To actually answer your question OP, I ate a lot of ox tail when I visited Rome and it was really good. I also had cow's cheek there and it was amazing, almost chewy like bubble gum but melted in your mouth. I visited a buffalo farm and had some fresh buffalo mozzarella which was also very good.

Beside that, you can't go wrong with the basic pasta dishes. Carbonara, Cacio e Pepe, Arrabiata, bucatini with fresh pesto, it's all good

It's totally up to personal preference, it's all good. Personally I prefer Southern because it seems more distinctly Italian to me, while I would prefer to just go all the way and eat French food or something rather than Northern Italian. The cured meats and risottos from the North are really nice though
