I thought it was 6 bucks for a whole bird at first.
$6 a pound is ridiculous. Especially for a shit bird like turkey. You can easily get a whole chicken for the same dosh and that will have more flavour.
Turkey is very possibly the worst regularly accepted food bird on the market. Inferior even to chicken but very obviously also to duck and goose.
And I would not be happy paying 6 bucks a pound even for a nice fat ducky

Where on earth are you that basic meats are costing that much? Up here in western NY whole chickens are ~$1 a pound, turkeys ~$2, basic bone-in hams are $1.25-$2 and even the super-duper double-glazed boneless ones max out at $4.50-$5, so either you're smack in the center of a super metro area or have real lousy shopping sense/store availability.

For weekly sandwiches for lunch consider poaching chicken breasts and making a cold sliced sandwich, or a chopped chicken salad. Add some vinegar or wine to the poaching water, and a few spices or herbs. You can bake the chicken on the bone, as well, big sheet pan of them, or as few as you need. You could George Foreman the breasts too, glazed with BBQ or lemon-herb mix, just know they are pretty much steamed with grill marks that looks good, but yea, just steamed.
You can assemble the chicken salad once chicken is cold the next day for convenience. My favorite is basic just green onion or dill, mayo, bit of lemon zest. Easy. The next best for me is mango chutney, jamaican curry powder, lime juice, cilantro. You can tuck in some apple, raisins, grapes or celery blends to make a waldorf salad.
Egg salad is even more versatile, since a cooked egg lasts many days before assembling the salad.

Try your hand at porketta, a stuffed roast popular for sandwiches. There's always a smoker you can work on the weekends and save your leftovers in the freezer.

Cold sandwiches of dressed seafood is easy mode.
