I agree they go well in a good chilli however, I'm looking for more "out there" ideas. Current idea is a tomatillo and fill vinaigrette.

oven roasted tomatillos aren't the most visually-appealing foods but they're quite good. they don't hold their form very well though, so half them instead of slicing them up

Noted. I've got enough of them growing to give me over 100 lbs output over the season due to fallen fruit which propogated. not a complaint, but would rather not waste.

Salsa Verde Recipe

Ingredients:
1 1/2 lb tomatillos
1/2 cup diced white onions
2-3 cloves garlic still in the skin (more if wanted)
1/2 cup cilantro
1tbsp freshly squeezed lime juice
2 Jalapeños or 2 Serranos (can remove the seeds depending how spicy you want
Salt to taste

Cooking:
Halve the tomatillos and place them in a baking sheet lined with foil, with the cut sides facing down. Add the garlic cloves as well.
Set the oven to broil and broil the tomatillos and garlic for about 5 minutes until the tomatillo skins are a bit blackened.
Let it cool off for about fifteen minutes Obviously take the garlic out of the skin at this point, then place all the ingredients except the cilantro in a blender together and blend until it’s all properly mixed together. Once its properly combined you’ll add the cilantro and blend a little bit more. Add salt to taste

My family makes a tomatillo sauce baked spaghetti, shits cash. Perfectly tangy and they melt white queso fresco chunks over it.
