The value in it for me is that it explains all those little things you need to know to become a “good” cook. When to salt what kinds of meat and how much of what kind of salt to use, how salt affects the flavor and texture of the meat, how to find quality oils that aren’t rancid and actually add nuance to the flavor of the dish, etc. Some of the advice I’ve heard before or knew instinctively, but this was a good refresher. Most of the advice was new to me.

The illustrations and anecdotes are kind of a joke but if you overlook those then the actual cooking tips are pretty solid
