Didn't have a pan in the appropriate form-factor, so the carrot cake recipe from "Kitchens of the Great Midwest" came out uneven. Tried to slice off as much burnt ends as possible, if It weren't being iced, this might have been totally ruined. Oh well, love is patient.

Experimenting with the carrot-and-walnut crust. Actually used hand-grated carrots for the cake but the carrot julienne and chopped nuts I just had to spare.

Kinda messy but half a pound of Neufchatel, half a cup of butter, and so much confectioner's sugar in this icing, nobody better complain.
