I unironically like Adam, not for his libtard personality, but for the sole reason that he understands that 98% of people watching cooking vids on Youtube are just people who want to make something tasty for dinner given the limitations of their kitchen in terms of equipment, ingredients, time and skills. This is perfectly examplified that he doesn't try to make "authentic" dishes and always give a good list of ingredient substititions and different methods.

This is counter to professional chefs who try to teach home cooks and have just one method of doing things, uses 30 trillion bowls, never show the whole process (pre-cut ingredients) and most fucking importantly never take into account doing FUCKING DISHES/CLEANING. I am looking at you Joshua Fucking Weinstein.

He’s good at optimizing the Youtube algorithm. Sadly when I’ve tried making his recipes, they’re never as good as he describes them. The chicken parm was better than most of the home-cooked ones I’ve been served, but I really missed the melted cheese layer and it was way under-seasoned, needed more garlic or some chili in there.

Yeah, his recipes are definitely more jumping-off points for you to experiment with and I can respect that. I might still try some of them like the quick poblano mole but just add like triple the flavorings that he uses. For actual recipes to follow, I’ll stick with Chef John. At least Adam isn’t as bad as Babish.

I actually yoinked this guy's season your board idea and use it on my steaks. I cook my steaks as I always do, reverse sear, plenty of salt and pepper, basted with butter and rosemary or thyme. Then I'll put more of the same herb I used to baste with on the board I'm resting the steak on and place the steak directly on top. Then slice and drizzle everything back onto the steak. Just adds a nice finishing touch.
