The fish are packed and then cooked (usually through steam or smoking), then the can is filled with any manner of liquid and shipped. They remain shelf stable because the cans are vacuum sealed.

In my opinion deenz thrives with acidic or sharper flavors. lox is more subtle, and can do well with a nice dairy fat. Deenz are better suited for onions, sharp cheese, hot sauce, etc. It's not nearly as subtle a flavor. If I was going to do deenz and cream cheese, I would at the very least include red onions, capers, and something acidic. Like most foods, it's all about balance

Ooh nearly forgot. A deenz rillette is a wonderful marriage of deenz and cream cheese. Shallots, green onions, dill, lemon juice, cream cheese, deenz, S&P. Totally wonderful. The trick is a full flavor spectrum. Putting deenz on a cream cheese bagel like you would lox is going to be underwhelming (unless you're a deenznut like me, who would go for that)

I had King Oscar for the first time- I usually have Brunswick since it's cheaper. My god, they were so much better! Smaller, more tender with a much nicer flavour, and the spine was a pleasant texture too

Get better sardines. King oscar is olive blandness. Nuri or espanalor srdines are good because you can taste the saltwater the sardines swam in
