It's the best brand in that price range I think (I haven't tried all of them). The cheaper high percentage bars tend to be powdery and harsh tasting. It shouldn't be bitter when made right.

I wouldn't have very dark choc with coffee though. I would pair coffee with something sweeter like candied fruits, baklava, revani, lokoum, pastelli, dates, croissant, spandauer etc.

High percentage chocolate needs something to cut through the strength a little bit. I don't like very much sugar in the bar itself, but I do think you can bring out the flavour in the bar with a very small amount good quality sugary things like dark honey, raspberry conserve, kalamata figs, candied fruits, nuts, alcohol such as port, PX sherry. Anything that complements/contrasts whatever flavours are in your bar.

Dark couverture is by all measures the highest quality and best tempered chocolate you can find at a regular store, but consumers overpay for gimmicky sugar garbage

I wouldn't describe it as bitter, but strong yes. Everyone's taste is different based on genetics and environmental factors (ie what you are born with and what you are used to eating). The higher percentage bars do need something a bit sweet to 'open out' the flavours imo.

That bar isn't a very good example of 100% cocoa. It's somewhat flat which is a sure sign of very basic forastero cocoa beans (not your criollo, trinitaro). Cocoa beans should be seen in the same way as coffee.

However, my main problem with that bar is that they kept the size of the cardboard packaging the same, but you only get half the chocolate for your money.
