Lots of places add a mild cheddar to the mix adds a bit of complexity to the taste and makes the top brown faster. It's not great using lots of it as it sweats oil and cooks as much as it melts. Use an extra mature cheddar in the mix instead of a mild and then add a bit of sage to take some of the edge off.

Lot of pizza place use a cheap mix of shitty cheese. Mozzarella cost way too much and normies don't see any differences. Here they use the cheapest emmental, it taste nasty but no one seem to care. I refuse to eat in a place who don't use mozzarella. Happened to me a few times:

I'm french, 9 places out of 10 in my shitty town use emmental, cheddar, mozzarella mix. I use to live in Lyon where you could find real pizza but even there, lot of those fuckers use shitty cheese mix, because they are cheap and customers don't care.
