Worked there in high school as a cook. The local one is pretty good had it last night, good treat for everyone once in a while. Still the best of the yum brands by far

I'm mostly with this, but too many places are absolutely FUCKING it up. When I was in my early 20s I worked at a grocery store deli for a year and I slung some damn good chicken in my day. We'd bread defrosted chicken the day before we used it, and the seasoned breading would help pull out moisture and add flavor. By the time it was ready to fry, this chicken was sitting in almost like a breading paste and you could see that it had penetrated the meat. We'd pressure fry for the first 75%, dump it to separate the stuck together bits, and then finish with an unpressured deep fry the last 25% until it was crispy and cooked through.

Shortly after I left, they changed their policy to bread it only just before the fry and the quality tanked. So if you can, find a place that doesn't have the breading station set up right next to the fryer.

My local safeway does a really good job and illustrates that difference well. Growing up they had awful chicken that tasted way too strong of celery salt and the jojos were undercooked half the time. Now their chicken is better than almost anywhere else's except popeyes spicy and the jojos are always well cooked. The tenders aren't as good as they used to be, though.

I used to work there.
it was ran by mexicans; they deep cleaned the frier once in the 5 months i worked there. Actually, they didnt do it, the hardass indian man taking night classes had to do it for them.
they would stomp chicken trimmings, raw pieces, down the drain, clogging it and making the prep area smell of rotten meat.
they didnt wear gloves-EVER. i saw rats attracted by the rotting flesh and the manager told me a little rat never hurt nobody.
there was always soda and standing water with literal mosquito larvae in it in the corner, because they didnt care to fix the soda machine leaks or mop it up since "the puddle just comes back"
never eat there if unless you want old mexican unwashed hand dirt in your hand-mixed coleslaw, mash potatos and chicken. As sanjay said "these filthy mexicans, they have the sensibility of a base dog!" man he would roast the shit out of them

I can't say anything nice about KFC, just disappointment all around. Their 'fast' happens because of pressure cooker fryers, but that drives oil right under the skin, into the muscle flesh and into the bone. It is oil logged, and it's hardly close to homemade.

thats not what causes that anon, that is just chicken sitting in the heat lamp for a long time soaking up the fat drippings. some people like, but i like you do not, as i would argue most people don't. if you get it fresh though, its goat. but this is really true for any fried chicken place. if its fresh its great, but not fresh soggy and greasy.
strangely enough, this is why korean fried chicken is so good. its par fried. so when you order it its fried again to reheat it and for some reason par frying food makes them alot better and less fatty. its the reason why the best french fries are fried twice.
