As much as I want to love Japanese food, I can't. Outside of Ramen and Okonomiyaki most of the food has the same flavor. It's not bad by no means but it isn't isn't on my bucket list when I think of foods to try out. Why is Japanese food taste the same?

They seem to rely on a comparatively limited selection of flavors (miso, sake, mirin, dashi, yuzu, koji, etc.). I'd say that the real defining factors of Japanese cuisine are seasonality and freshness, where the food is lighty seasoned and the heavy lifting is done by the flavors that come from eating something as fresh as possible.

If it's not fresh, or is heavily processed, Japanese food is just kind of depressing.

Can anybody give me some insight on this?
Due to an error in my groceries delivery, I've ended up with this teriyaki sauce rather than the normal one I wanted. The issue is, this is measured in grams (rather than millilitres), and is closer to a paste/jelly than a liquid. Is there something I can do to it, like adding water, to turn it into normal liquid that I can cook in?

One of my most favorite foods when I was a vegetarian for a couple of years for health reasons was Tempura Vegatables.

However, my sauce to dipping them in was hardly traditional. There was a really nice sweet fruit sauce (apricot, I think) at the grocery store that was just perfect for the tempura vegetables. On the other hand, I never liked that sauce with anything else.

God I love getting the boat at a sushi restaurant. I know it's so stupid and childish to get excited about it but when I was a kid my dad and I used to go to a local hole in the wall sushi joint all the time and he'd always order us a sushi boat to split. WTF happened to Ninben? I've been buying this from Amazon for quite a while now and my most recent order had a white label which had a different ingredient list than the previous bottles bought at the same listing. The first ingredient is water instead of soy sauce and the tuna is lower on the list. Apparently other people have been getting the same thing recently, some people are saying that Ninben was sold to a shittier company but I can't find anything about an acquisition on their site. Shirakiku now appears on the label but as far as I know it was there before and I just never noticed it.

What really kills me is that the white label version doesn't seem to be listed on their site, at least not the .jp one. I can still find the real orange label on specialty sites so I can't help but wonder if they've started making a shitty version to export to the roundeyes.

Yeah they seem like a product that would have to be made by hand and eaten right away based on a little reading. Maybe you guys could make them at home together. Homemade pasta is super easy, and this just sounds like a dough that’s more delicate and easy to crumble and dry up. But the blog I read said to use boiling water to make the dough to get the starch to kind of gelatinize then knead the dough for a minute and roll it out, flour it with more buckwheat flour, roll up like you would with a sheet of pasta, cut the noodles, boil, run under water, shock, then eat. I kind of want to try it but I just have whole buckwheat right now. Looking into grain mills recently.
