I've been making breakfast burritos this week - so good and easy. Scrambled eggs, potatoes, diced onion and either bacon or sausage slices. For potatoes my shortcut is to use frozen hashbrowns - cook them and then cut/crumble into the burrito.

Huevos con papas

I've only ordered huevos con papas once at a Tex-Mex restaurant.

It was certainly edible, but not real flavorful. Basically it was french fries and scrambled egg. And the french fries were just cooked in a pan and kind of mushy, not deep fried.

I have made huevos con papas myself a few times and every time they were more flavorful than what I got at that TexMex restaurant.
