All of the Knob Creek expressions are good, solid bourbon. They aren't anything spectacular, but they work well. Think Toyota Camry. Perfectly serviceable, even a little bit fun. If I were you, I'd spend that 60 bucks on an Elijah Craig barrel proof and have a couple bucks left over. But that's just me. Nothing wrong with your idea, the 12 is a fine expression.

As an American I've only found Asahi brewed in Japan once, and it was tall cans. Strangely, Asahi Black or whatever is brewed there.

Every single day, the knowledge that he has shitted away the best years of his life creep closer and closer to the surface, causing him to cling tighter to the bottle. These are my go-to's that I always keep on hand for bourbon and rye. Best bang for your buck by far in my opinion.

For gin I like to keep aviation and strange monkey on hand, but I've usually got a few others too like Tanqueray and Hendricks.

For rums I usually have Plantation 5 year aged and Goslings black seal, haven't really settled on a go-to white rum since I don't use it much right now.

I don't drink scotch very often but Monkey Shoulder is what I keep on hand because why not.

Laird's apple brandy is the only brandy I really keep around with any regularity.

For vodka I just keep a big bottle of absolut because I only cook with it.

Plymouth? Yes, I often drink it straight. It's a very immersive gin. I wouldn't want to muddy the flavor or scent profile by mixing it in a cocktail. Most I'll do is pour in some tonic or club soda and drop an unsqueezed lime wedge in. Only to lengthen it and enhance the gin's character. Another great gin to drink neat is Sipsmith. If you want to mix I'd suggest Beefeater. It's simple, cheap, tasty and compliments other flavors without needing to be the focus of the drink.
