go to a mexican grocery that has a decent meat counter/butcher - the kind where they make their own in house chorizo. There is a good chance they also make and sell machaca. You can also try getting some pork floss from an asian market.

Slice meat into slabs about 1/2"-3/4" thick with the grain. Salt liberally and stick in the fridge for 1hr. Remove and wipe excess salt from meat. Brush with a mixture of 1:3 Worcestershire and vinegar. Then season heavily with ground coriander and pepper. Dry until it bends but doesn't snap and the fibers are pliable. The interior should end up slightly pink. I can dry it in about 6-8hrs in my Nesco dehydrator. You could make a biltong box, but I haven't used one before. It's really easy to make biltong.
