Handling them gently all the while, rinse in a bowl, drain, and dry on paper towels. Cut the livers into small pieces, about the size of your thumb past the joint. Get a big pan good and hot; not too hot, we're not cooking a steak; with enough lard or veg oil to coat, start frying the livers. Don't stir for first minute or two, let them sit and get a little brown on the first side, sprinkle salt and pepper over all. Now stir once, let them sit 20~30 seconds, stir again same thing, until you don't see pink anymore, and remove to a plate. Clean the pan. Now you need: Minced garlic, red onion sliced pole-to-pole (Google if you don't know what that means), little red chiles sliced (chiles de arbol or Thai birdseye chiles for example), and the green part of scallions cut into one inch sections. How much you use of any of these is gonna be up to personal preference and how much liver you're working with. Couple tablespoons oil, hot pan, add all the aromatics except the scallion greens and stir fry until fragrant, add the livers, mix everything together, add the scallions at the last moment, mix again, serve.
