Many modern variants use a white wine (vinegar) reduction with shallots and often bay leaves, pepper, pimento, lemon juice etc. so it's not just butter.

It's a butter, lemon, pepper, egg yolk sauce.

Pretty much yes. Still adds a lot more flavour to it and is a good alternative to a bearnaise if you can't get some estragon and chervil.

It's fantastic on toast, and not bad on beef (when you want an enhancing accompaniment, instead of "hide how bad the steak is" sauce).

Hollandaise is mostly butter, so if something tastes good with butter, it's probably good with hollandaise.
