That's not a proper representation of the Norwegian national dish. It's obviously not cooked long enough. Sure in modern times people use lamb and add the cabbage later to keep it nice looking. But it's total bullshit. For the correct flavour you have to use sheep and it has to cook enough for the cabbage to dissolve.

It does not look good but the stock and the fat from the lamb will make the cabbage delicous. This is best photo I found on google, but your'e not supposed to garnish with parsley.

Fuck this shit about trying to make dishes insta-friendly when they fucking aren't supposed to be.

Anyway, I'm not saying this is great cuisine, but let's be fair to the dish. It taste good still in it's extreme simplicity.

There are modern takes of fårikål that are more exciting. Some add garlic, chili, ginger. That's not my style.

My take is still super secret but it does include garlic. The long time it takes to cook this dish will leave no "garlic"-taste. Long cooked garlic turns into umami.

The only truly New Zealand dish has to be Hangi
Unfortunately it's normally prepared by someone who has never used a herb before but an old flatmate of mine inherited his Grandfathers hangi stones and he had worked as a Chef.
Had a hangi for his last birthday and different people went and shot different animals; Thar, Deer, Mallard, Boar, some chickens, I only had an air rifle but I knew some spots so I went and got 3 Rabbits.

According to google it’s schabowy. Basically a budget version of viener schnitzel made with pork. Usually fried in an oil filled skillet to crisp it up. Boiled potatoes with butter and dill as a filler. For veg it’s either cabbage or thinly sliced cucumber mixed with sour cream and salt + pepper. Peak comfy food imo, I rate it 8/10
