Renee redzepi of NOMA swears by his grasshopper garam as basically cheating on every dish. There was also a very famous high end Mexican restaraunt called "Broken Spanish" that would use dehydrated and seasoned grasshoppers (chapulines) as a crunchy garnish on its dishes. I think using appropriate insects flavor profiles as seasoning or garnishes on dishes is pretty cutting edge in high end culinary but it should be treated as such. The whole "eat bugs they're a sustainable source of protein" is absolutely ridiculous but there is definitely some cool stuff that can be done with insects as garnish and dressing from a creative standpoint.

Humans haven't decided crustacean are more worthwhile to eat than insects on a whim. We tried them out, found out they got juicy meat in them, and eat them. I don't know if what insect are made of can be considered meat, as in muscles and fat, now I'm left wondering
