Does anyone else appreciate not having an open flame in a multifamily apartment building? There's a peace of mind to it, never any combustion, the worst that can happen is a pan overheats and the cooktop shuts off. no singed knuckle-hairs or teatowels, no grills to remove no burners to wipe around. just one wipeclean ceramic surface. one portable countertop unit would not be enough for me, and I did love my time with a nice modern gas-grilled stove. But with two hobs and a growing collection of ferromagnetic cookware, I've made so many delicious dishes I hardly miss it.
