The only real problem is curd accessibility. If you can get curds you're golden, so the midwest is fine, but shredded mozzarella or diced cheddar doesn't cut it. It'll get you in the ballpark, maybe, but it's not quite it. And there's nothing wrong with being a little particular about dishes man.
