you have to eat everything that is edible (ie digestible and yielding some energy after cooking/prepping). Unless you're planning to use it for something else. So yeah, if the roots and stems are non-toxic and can be made edible through cooking, you have to eat those too.

Offal can be good with the right sauce/compliments, and offal can also be mashed into great sauce, esp for rice/pasta or any meat. Tastes good but without the gross texture.

My family used to be farmers so we ate this stuff all of the time, after all you're not going to slaughter something and waste any part of it.

The traditional way to eat it in Northern Europe is grinded down to paste mixed with Barley or oats which is part of what scottish "Haggis" is too.

No, they are delicious. All that is needed is to cook them enough. They aren't good undercooked and are very hard to overcook. Very easy to make them right. You can literally just grill them on charcoal and they will turn delicious.
