Over time people's standards have fallen to the point the fisherman's by- catch fried in week old oil and grey potatoes qualifies as "fish and chips"

I make beautiful fish and chips.

Tasteless without a fuckton of vinegar and salt.
Horribly expensive despite being a piece of deep fried convenience cod with some precooked fries made by a smelly paki without gloves.
Served so hot you could get burns from the steam it emanates when you open the tin, for no apparent fucking reason.
Really unhealthy for all the mentioned reasons above, I tried to eat fish and chips for a week because there was ironically nothing cheaper available, and I threw up at the third day.

This does sound bad, you should try moving to a nicer (whiter) town. It can be delicious. If you're worried about the health implications, a well battered fish isn't technically fried, it's steamed in its own moisture and the batter seals the meat separate from the cooking oil.
Discard the batter and eat the fish, it's so tender and flakey when it's cooked this way.
Also get haddock it's got a far superior flavour to cod and way better for the environment

Not as good as it used to be.
Most chippies don't use beef dripping anymore.
Most don't use fresh fish anymore.
Most over-fill the fryer or don't let it get hot enough - soggy chips.
I miss the smell of vinegar permeating through yesterday's newspapers. Very distinctive and appetizing.

Its not hard to get it right, yet most get it wrong.

WRONG, you need oil that has had 100s of fish fried in it already to get the full flavour
in my hometown the best chipper is ran by two old boys, they always whistle different tunes while they are working and also have a radio playing, it makes me feel delirious during the 5 minute wait, also its right next to the harbour with 3 fishmongers on the same street, cityfags can't compete

The chips have to be somewhat crispy, and the batter should be relatively thin, and crunchy - not like a fish-stuffed bannock. Ideally served with lemon, malt vinegar, and maybe some tartar sauce if it's got some good tang to it - none of that jarred relish and mayo shit.
