Never got a cake right in my life.
They are always tall in the center with the low burnt sides.
Is it my oven?
I follow the recipe the best I can.

or is that thing really dense because you didn’t mix your batter properly?
your oven is too hot the poor cake is getting scorched are you using a fan oven?
all cakes are taller in the middle than about the edges, your to trim the layers to an even height before frosting

No idea what you were going for, OP, but if you try to make a genoise/pan di spagna without beating the eggs and sugar thoroughly so that they gain several x volume, then the end result will look similar to your pic. I know because I made this very mistake the first time I tried to bake one. You absolutely need an electric whisk or kitchen robot to mix the eggs for that particular recipe.

I used to have the same issue with my cakes rising in the middle. The solution is actually really easy, after you pour the batter in get a spoon and spoon out the majority of the batter from the middle and put it on the sides so theres a hole with less batter in the middle that way when the middle rises it'll even out and be the same height as the sides. Also If your sides are getting burnt try cooking it on a lower temp

i saw a video, i think it was weissman's there his cake batter peaked at the top, he just recommended taking it out of the pan as soon as you can and flipping it over so the peak can get a bit pushed down into the batter. haven't actually tested it much since so far i've only made a couple of cakes (tres leches and chef john's honey cake) where this didn't matter as much but it seems clever to me.

It's your cake tin. A high quality cake tin is reflective, thick, with tall sides. All of these help the cake heat up (hence rise) evenly.

I've read they'll rise more evenly if there's steam in the oven, but I never bothered to try because it didn't matter much to me. But you can try adding a pan with boiling water to the oven while you bake the cake, like some people do with bread.

If it was a little off and you want to build a professional looking cake you would use a cake trimmer. This levels off the cake. If it's burnt however, I'd start again.
